Volpi Bresaola is a salt-cured and air-dried beef, made according to a traditional recipe. Extremely lean, and sweet, with a deep ruby-red color, Bresaola is commonly served in very thin slices. It can be enjoyed plain, paired with Parmigiano Reggiano and arugula, or in a simple "carpaccio" with extra virgin olive oil, lemon, and black pepper.

"For all the slim pickin’s in America, this Bresaola has that old world Italian flavor. 9/10 for great flavor, good color, and true to specification. The only improvement could be slightly lower fat content (5-10% less) in the cut selected for curing."

"I thoroughly enjoyed this bresaola. I've been buying it in a 3oz package from my local grocery but knew I wanted to offer it on a charcuterie for our daughter's wedding. A local Italian market sliced it for me, and we had plenty for all to enjoy! So glad I have just a tiny bit leftover."
