Volpi Dry Cured Hot Coppa - approx. 3 lb

This air-dried whole pork shoulder butt originates from the culinary capital of Italy - Emilia Romagna. Having much in common with prosciutto, Coppa should be sliced thinly. This is the spicy version of the regular Coppa.

needs to be sliced thin
The taste was wonderful but I wasn't able to slice it thin enough with just a knife so it was a bit tough. You almost need to have a meat slicer to truly enjoy.

The Very Finest Coppa On the Planet
As a first generation New York Italian, having been raised in an Italian neighborhood where Neapolitan, not English or even Italian was the primary language, coppa was of course, common to my experience. I have tasted many, many different coppas (or ''cappy'' as we say) over the years, and out of all those coppas, whether fancy or humble, domestic or foreign, Volpi's coppa has consistently had a superior quality and taste. I unreservedly call it the very finest coppa on the planet.
