Academia Barilla's Aged Balsamic Vinegars are personally selected in Modena by a panel of top local experts and chefs through blind taste tests. Made from precious cooked must of Trebbiano di Spagna grapes from the Emilia-Romagna region, it is aged 3 years in oak and cherry barrels. It is distinguished by a tangy and sweet, with hints or fruit, oak and cherry wood aroma, a rich and full bodied flavor and a thick, almost syrup-like texture. These attributes are due to the high quality of grapes, the precious wooden casks in which they age and the timing of the transfers from one type of cask to another.
