Caponi Handmade Pappardelle Egg Pasta - 8.8oz. pack
Pastificio (pasta factory) Caponi is a small Tuscan pasta company, headed by two brothers, Andrea and Alessandro Tagliagambe. Since 1953, the small shop has been producing fresh egg pasta using the finest ingredients and traditional production methods. Behind every great product are great ingredients. Andrea and Alessandro credit the regional water, the fresh eggs they purvey from a nearby farm that are split by hand, and high quality durum wheat flour for their valued egg pasta. The drying is the most important phase of the production process and it distinguishes the Pastificio Caponi from the other pasta factory, in fact it takes 70-80 hours at room temperature to dry. It is this slow drying time that permits the dough to gently reach perfection.
Pappardelle are a large, very broad fettucine style type pasta. It is traditionally and best paired with sauces containing meat, beef, rabbit, hare, pheasant and wild boar.
