Caponata is a classic Sicilian dish that blends eggplant, tomatoes, peppers, olives, and capers with olive oil, and herbs. A touch of vinegar and something sweet are a Moorish addition to the typically Italian ingredients. Together, the flavors make a salty-sweet-tart dish that is traditionally eaten at room temperature as part of a picnic, antipasti tray, or alongside meats. It also makes a wonderful snack with toasted bread or a spread for sandwiches.
