    Locatelli is a brand name of cheese and Pecorino Romano is a variety of cheese. The Locatelli family began producing Pecorino Romano over 500 years ago in the Lazio region of Italy. Today, Locatelli Pecorino Romano is considered to be one of the finest Pecorino Romano's available. It is unique in quality because it is hand-crafted from 100% pure sheep's milk which is aged over 9 months at a minimum. The result is a spicy and sharp, dry cheese that is perfect for grating.     NEW Montasio (Aged 20 Months)

    Only the richest fresh milk from the surrounding pristine mountain pastures is used to make this ancient cheese. Montasio can be sold and eaten after aging for as few as two months, but this particular hard version, Montasio Stravecchio (extra old), from Latteria Perenzin, is aged for both five and 20 months. While the five month-aged cheese still retains a bit of softness and a bright, milky flavor, the aged Montasio is especially intriguing for its intensity, balanced out by prominent, yet mellow, flavors. The extra aging gives Montasio a particularly aromatic flavor reminiscent of dried fruits, berries, grasses, and nuts with a tangy, almost citrusy mid-palate.

    This cow's milk cheese undergoes an initial 6-month period of aging in La Casearia's cellers, after which the wheels are soaked in the Veneto's local Raboso (IGT) wine for several weeks. The cheeses are then carefully finished with an additional six months' maturation. Underneath Ubriaco di Raboso's deep violet-hued rind lies a semi-hard, pale yellow paste with small make holes scattered throughout. The aroma is distinctly that of the wine and the flavor has notes of black berry and sour cherry, finishing with a spicy yet mild zing.
