Organic, non-GMO durum wheat pasta from Matera, Basilicata. The form of this pasta takes its name from rings of calamari, which resemble its shape. As the name may suggest, it is an excellent cut of pasta for seafood based dishes. It is also perfect when paired with heavier sauces that can stand up to Calamarata size.

Its mountainous inland is known for staple foods such as potatoes and maize, while its rolling plains bear diverse varieties of wheat and olives.

Senatore cappelli and other durum wheats, water. Pasta produced with only Lucanian durum wheats (20% senatore cappelli), cultivated and milled in Lucania ( Basilicata), dried slowly for 48hrs.
