The Di Martino Pasta Company is based in Gragnano (a town situated in the Italian region of Campania) and has been owned by the Di Martino family since 1912. The pasta is made using the traditional Gragnano method of extrusion through a bronze dye, using only 100% Italian durum wheat semolina, combined with pure local spring waters and a slow drying process in the climate of Gragnano, Campania. Di Martino pasta is also recognized with the prestigious IGP mark (Protected Geographical Indication) which gives them the certification that the pasta is produced accordingly with certified traditional methods of the town of Gragnano. All of this gives a special texture to adequately allow sauces to hold to the pasta thus enhancing the overall flavor and density.
