Great salami, with proviso

Wonderful taste and the look of a true old world Salami. I have to say though, that the white surface on the casing is not a true mold from a long hang time, but rather rice flour. Okay, price is an issue, but if this nice salami was allowed to hang until dry and develop a real penicillium mold, This would be world class. Take a hint from Columbus.
