To the truffle lover, warning, it is better than caviar. Truffle Caviar is made from the black winter truffle juice, which is obtained directly from the fresh truffle during the cooking. The tasty juice is then reduced in small pearls through sophisticated technique called "sferification". These pearls have the taste of the truffle but the same color and texture of the caviar.

Very good, different and a very unique taste...melts in your mouth
Black winter truffle juice ( black winter truffle: Tuber Melanosporum, Tuber Brumale; sodium bisulphite), water, sodium aiginate ( thickener), squid ink, salt, citric acid ( acidifier), flavor. Contains sulphites.
