Truffle Caviar

To the truffle lover, warning, it is better than caviar. Truffle Caviar is made from the black winter truffle juice, which is obtained directly from the fresh truffle during the cooking. The tasty juice is then reduced in small pearls through sophisticated technique called "sferification". These pearls have the taste of the truffle but the same color and texture of the caviar.

In 1968, Domenica Bertolusso and Beppe Montanaro were looking for a new way to meet the growing demand for truffles in their restaurant, "Da Beppe." What started as a brief adventure has turned into a half-century of experience in the truffle industry. Tartuflanghe is now home to a full line of specialty products made from the Alba white truffle, foraged and prepared in the heart of the Piedmonts.

The Piedmont region sits at the foot of the alps, bordering France and Switzerland. Its soaring mountains and rolling plains are home to some of Italy's most beloved cuisine, from egg-rich pastas to rich, salty cured meats.
