When you think capers, think capers from Pantelleria. Pantelleria is a windy island off the coast of Sicily. They get their distinct flavor due to the volcanic rich soil of the island. Pantelleria capers are picked before the flowers are formed and then cured in salt to preserve thier intense and floral flavor. Capers are a staple for any Italian pantry. We recommend using them in caponata, puttesca or lemon sauces and with fish. Note: Rinse before using to remove excess salt.
