Cesare Rondolino purchased the Columbara estate in 1935, intent on reviving the centuries-old tradition of rice farming on the property. Today, the Rondolino family continues to oversee rice production on the Columbara according to traditional methods. Acqerello has recieved special recognition from the Slow Food movement for promoting good, clean, and fair nutrition.
The Piedmont region sits at the foot of the alps, bordering France and Switzerland. Its soaring mountains and rolling plains are home to some of Italy's most beloved cuisine, from egg-rich pastas to rich, salty cured meats.
