Luigi Donnari and his wife Maria Alzapiedi, owners of this home-style pasta company in the medieval village of Monte San Giusto in Le Marche, are truly flour artist's. They are particular about each and every part of the process of producing this special line of egg pasta. Only the very best local ingredients are used, such as carefully selected free range eggs from only free-range chickens that are fed non-gmo feed and flour that is stone ground to strict specifications. When you taste this pasta, you will discover that it is delciously chewy and very flavorful with egg. The texture is what Italians like to call "carnosa" - "meaty" which basically means that the pasta is porous and strong enough to absord and retain several different types of sauces.
