Corn cobs are matured naturally in the open air and under the sun, which brings out the true taste and maintains their unaltered nutritional goodness.  Polenta Taragna is a combination of corn meal and buckwheat flour. The buckwheat portion of this polenta makes it an easy dish for digestion.  Taragna polenta is a traditional specialty of the Valtellina and is best to serve along side fresh cheeses. You can also enjoy along side any kind of meat dish, stews, vegetables and sauteed mushrooms.
