Hand Formed Batista Caciocavera

(Lovera's) - 8 oz

Crafted from a blend of cow and goat's milk, this cheese is truly a unique experience in the world of stretched curd cheeses. All the creamy goodness of the Jersey cow's milk, along with the nutty and caramel notes of the La Mancha goat's milk; Batista is smooth and creamy yet dry enough to be grated on your favorite pasta dish or shaved on a fresh garden salad. Each cheese is first hand-formed, bathed in saltwater, then individually tied with twine and hung to cure a thin, marvelously edible rind. We are thrilled to share this one of a kind, award-winning cheese with you.

Region: USA

In the late 19th century, Italian families began to arrive in the United States by the hundreds of thousands. They brought with them memories and recipes from home, adding to an already rich culinary marketplace. Today, many of these early pioneers have passed their love for Italian cuisine on to a new generation. While times have changed, the recipe remains the same: traditional Italian favorites made the old fashioned way, with locally sourced ingredients hand-picked for flavor.

Grade A raw Jersey cow milk, raw Lam Mancha goat milk, salt, rennet, cheese cultures. Aged over 60 days.

I spent my summers in Haileyville. Every year we would bring home gourd cheese and freeze pounds of sausage to take home. I order all the time and it is the best..
