Balsamic Vinegar (Fiaschetta) - 4 Leaf Rating

Fiaschetta in Italian translates into "flask", which is the inspiration behind this modern and unique bottle design from Acetum. The real treasure is the balsamic though. This balsamic has been awarded 4 leaves, which is the highest rating given by the strict standards of the AIB (the Italian Balsamic Tasting Association), which certifies this as quality Balsamic Vinegar of Modena. The sweet and aromatic balsamic has a balance and rich flavor and we recommend it for finishing your finest cuts of meats, poultry, seafood and cheeses (especially parmigiano reggiano, the king of Italian cheeses). It is also great for marinating and drizzling over grilled vegetables.

Producer: Acetum

Giuseppe Bombarda founded dell'Acetum Cavezzo in 1906, and it remains in the family to this day. The acetum estate is a staple of Modena, producing some of the region's finest Lambrusco, Sangiovese, Trebbiano and Albana grapes.

Region: Emilia-Romagna

On the northern edge of the Apennines is the region of Emilia-Romagna. The region enjoys a rich and ancient history, accentuated by the vibrant capital city of Bologna. The spiritual home of parmesan cheese, prosciutto, and traditional aged balsamic vinegar, Emilia-Romagna is home to some of Italy's most treasured culinary traditions.

I originally purchased this for special salads, but hubby found out that he loves it. Now, he uses it on salads, meats, cooked & raw veggies, and anything else he can think of. I always order at least 2 more when he opens the last bottle -- otherwise we run out & he takes everything out of the cabinet looking for it.

I first purchased this Balsamic at a farmer's market in Florence and was disappointed when I ran out and couldn't find it in the US until now. I reserve it for special dishes and never heat it. It is wonderful.
