Parmigiano Reggiano Vacche Rosse (Red Cow)

We've been waiting excitedly for our shipment of Vacche Rosse, one of the rarest Parmigiano Reggiano cheeses. You're in for a treat. Farmers used milk from the Vacche Rosse (red cow) to make the first Parmigiano Reggiano in the early tenth century. Today, a small group of artisanal farmers in Emilia-Romagna continue the tradition of making Parmigiano Reggiano Vacche Rosse. Produced in small quantities to ensure the highest quality, these red cows are grass-fed, resulting in rich, buttery milk. The raw milk is aged with rennet and salt for at least 30 months, longer than most other Parmigiano Reggiano cheeses. It is everything Parmigiano should be — buttery, fragrant, nutty, and soft. Use this as a garnish for special dishes, serve it with your best balsamic, or as a pairing with antipasti.

Outstanding flavor!! It touches all the right notes as a tasting cheese and very good as a grated cheese. My only complaint is how does each 8 oz piece (I ordered 2 pounds) have rind?

Although not the cheese I had hoped for, this is an excellent Parmesan indeed. (I am in search of a very rare, old nut-colored, mild one). Our family is very pleased with this special treat.

I ordered this cheese expecting it to be good but it exceeded all expectations. It will forever spoil me. This cheese should be eaten alone or added when the taste can be appreciated for it's own sake. I will buy again.
