Sicilian Eggplant Caponata

A typical appetizer from Sicily with eggplants and slightly fried vegetables. Use as a cold plate appetizer or condiment for pasta. It is also ideal as a side dish to bread crumbed meat or chicken. Serve with mature cheeses or as a chutney for a cheese board.

This was so close to the eggplant that my cousin Lorelei used to can when I was young. As a Calabrese American Italian it brought back memories and flavors of my family. I loved it!
