Each region in Italy has its own pasta shape, and in western Sicily around Trapani this is busiate. Like other fresh pasta from the south of Italy it is made from durum wheat flour (semola di grano duro rimacinato) and water only, no eggs. Busiate are thin hollow tubes of pasta, about 7 cm (3″) in length and with a diameter of about 4 mm (1/6″). The "ciccio dorazio" selection comes from the mind of Francesco D'Orazio, called Ciccio, who selected with patience and passion the best products of his region. Producer: Ciccio Dorazio

Based in the medieval town of Conversano, Ciccio Dorazio began life as oil mill in the 1930s. Over the years its oils gained a reputation for quality and consistency, a tradition it has now carried over into a full range of Conversano-grown pasta, sauces, fruits and vegetables.

Region: Sicily

The largest of Italy's twenty provinces and the largest island in the Mediterranean, Sicily sits just off the "toe" of Italy's boot. Monuments the island's rich history abound, from the famed Valley of the Temples to the immaculate Byzantine mosaics at Cappella Palatina. The cuisine here claims a number of influences from across the Mediterranean world -- Greek, Spanish, French and Arab have all at one point inhabited the island, infusing it with their respective culinary traditions.
