Bresaola "Cured Beef"

(Volpi) - 2.5 lbs

Volpi Bresaola is a salt-cured and air-dried beef. Unlike most other cured meat products, Bresaola is extremely lean, with little or no visible fat. Sweet and aromatic with a deep ruby-red color, Bresaola should be sliced very thin. It can be enjoyed plain and on its own, but we enjoy using it to prepare a unique style of carpaccio by drizzling some high-quality extra virgin olive oil, some fresh lemon and finely grinded cracked black pepper. It pairs perfectly with Parmigiano-Reggiano and arugula.

I am ordering again because the flavor is amazing. Although we've never had Bresaola before this is outstanding. What is amazing is it's so lean. The slices pictured is exactly what you get.

I have looked for several years for a thin-skinned cured beef product like the Spanish cecina to no avail. Recently I found this Bresaola in Chicago and served it on bruschetta as an appetizer. Everyone's went into orbit. Way leaner than sausage products but in my mind even more delicious. Just the right amount of spice. Now looking for it in St. Louis, but so far no luck.

The men enjoyed it, even the little ones. I used one of my better long knives to make ultra thin slices. Probably got 1/4 of the way through the meat. This will last a while. 10 stars.

Volpi Bresaola is about the best I've found outside of Italy. I love this product. Delicious and fairly priced.

Short version: Great product, every one who tried it loved it. I'm ordering another one. Long version: I am an Italian american who grew up eating all the Italian delicasses you can think of, however as an adult I have stopped eating pork. Trying to find for instance salami that tastes like what I was used to but wasn't made of pork seems like an impossible task, however Ditalia's "Volpi" brand of bresaola was there, and turned out to be just what I was looking for, wonderful texture, and flavor... I felt like a kid again! Love the product, but be aware that shipping outside of their home area is a bit pricey. They do a great job insuring the product arrives fresh and unspoiled, but that cost extra of course. I would recommend buying enough product to justify the shipping.
