Culatello Prosciutto

(Volpi) - 5 lbs

Culatello translates into "little backside" and refers to the major muscle group one finds in a prosciutto. This boneless ham is carefully wrapped in cord, resulting in a pear shaped final product with a sweet pork flavor and silky rose-colored meat. Culatello has a fantastic texture which almost melts in the mouth. Serve with simple crusty country style white breads, sweet melon or fresh figs, and an elegant red wine

Producer: Volpi

In 1900, John Volpi arrived in America from his home in Milan, Italy. Longing for the vibrant tastes of his homeland, John founded Volpi foods in 1902. From his small storefront in St. Louis, John delivered authentic Italian cuisine to a new audience. Today, the Volpi continues to live out John's dream, supplying Americans across the country with fine Italian fare made from exceptional ingredients.

Region: USA

In the late 19th century, Italian families began to arrive in the United States by the hundreds of thousands. They brought with them memories and recipes from home, adding to an already rich culinary marketplace. Today, many of these early pioneers have passed their love for Italian cuisine on to a new generation. While times have changed, the recipe remains the same: traditional Italian favorites made the old fashioned way, with locally sourced ingredients hand-picked for flavor.

We haven't cut the last one we purchased, but if it is anything like the one prior, it should be wonderful. Really, really excellent. Thanks.

Culatello Volpi is like the Italian one

The real Culatello comes from Zibello (Parma province in Italy). I know it very well since I lived very close by for 30 years. Volpi Culatello has the same taste and the same fragrance of the real one. It looks like it is coming from a cellar that is perfect to age the Culatello. I'll buy it again for sure.
