Pancetta is often referred to as Italian bacon. However, unlike American bacon, which is most often smoked, pancetta is the unsmoked pork belly that is cured in salt and spices. Pancetta adds a distinctive pork flavor to pasta and several other dishes, without infusing into them bacon's smokiness. In the USA, it is a common substitute for guanciale, which is a traditional base for many classic pasta dishes, like carbonara and all'amatriciana.

Outstanding product. I had the opportunity and privilege to see the product being made and the cure rooms in St. Louis. As an Italian American, I am proud of the heritage they strive to preserve. I highly recommend all of their cured meat products.

I have been a customer for 10+ years through 3 states. The pancetta I order is some of the way quality I've ever found-high meat content with the right amount of fat-so much better than I find at our local stores. And the price is unbeatable!
