Coppa, which is an air-dried whole pork shoulder butt, has its origins from the culinary capital of Italy – Emilia Romagna. Our spicy and hot coppa from Volpi is a wonderful combination of meat and fat with an aromatic smell of spices and herbs in which it is cured. It has a nice kick to it. Sliced thin, it is a classic on a plate of salumi (cured meats) and is perfect from sandwiches.

The taste was wonderful but I wasn't able to slice it thin enough with just a knife so it was a bit tough. You almost need to have a meat slicer to truly enjoy.
