Cavatelli, or "little hollows" in Italian, is a miniature shell shaped pasta with a fold. Ciccio D'orazio's Cavatelli pasta comes from the mind of Francesco D'Orazio, or "Ciccio", who selects the best ingredients from the region of Puglia to make his version of this classic pasta.
