Culatello translates into "little backside" and refers to the major muscle group one finds in a prosciutto. This boneless ham is carefully wrapped in cord, resulting in a pear shaped final product with a sweet pork flavor and silky rose-colored meat.  Culatello has a fantastic texture which almost melts in the mouth.  Serve with simple crusty country style white breads, sweet melon or fresh figs, and an elegant red wine.
