Prosciutto Ham

Prosciutto Ham is made from the pig's hind leg or thigh. This dry-cured Italian ham is best enjoyed when sliced thinly and uncooked. The buttery and fatty cut of meat has an aromatic aroma, sweet flavor and will simply melt in your mouth. The key ingredients in prosciutto ham are the quality of the pork, salt and curing time in a perfectly controlled temperature and humidity environment. Volpi Prosciutto Ham is made in the tradition of Italian prosciutto di parma, with the main difference being the type of pigs used relative to Italian ham and the use of natural mountain air to aid during the curing process. Volpi Prosciutto was recently rewarded by America's Test Kitchen as the best USA made prosciutto. Try it on its own, in sandwiches, wrapped around asparagus, served with melon, antipasti, or even with eggs for breakfast.

Prosciutto di Parma

Prosciutto di Parma is made virtually the exact same way that prosciutto is made in the USA, but the main difference is that all prosciutto di parma is made from all-natural ham, with no added preservatives and from pigs raised and controlled by strict Italian government regulation that allows only the best Italian ham to become prosciutto di parma. Italian ham from Parma is considered by many to be the only true prosciutto because of the regulation and quality of pork used. While it has a slightly nuttier flavor because the pigs used are often fed the whey that is left over from making Parmigiano Reggiano cheese, the difference between Volpi Prosciutto Ham and Italian Prosciutto di Parma ham is slightly different.
