Biancoperla White Corn Polenta

(Terriero) - 1.1 lb

Biancoperla corn has long been the variety of corn grown in the area of Veneto between Padova and Treviso. It is know for its low yield, fineness and delicate flavor. While other more high-yielding varieties of corn for polenta came to cultivated in this and other parts of Italy, a few careful farmers continued to grow this prized corn varietal. Perfect served with seafood stews or grilled fish. Try topping with Radici of Tuscany White Bean appetizer.

Producer: Terriero

Region: Veneto

There's more to this region than the snaking waterways and Byzantine mosaics of the capital -- Venetian cuisine is also a wealth of splendid surprises. From snackable cicchetti to savory rice and polenta, the food here is packed with flavor.

This is the first time I tried white polenta and I loved it. I noticed I didn't need to add as much butter and parmesan at the end of the cooking process which is standard for polenta. It has a boost of flavor on its own requiring less flavoring at the end. It cooks within 15 mins.
