Il Forteto Pecorino Toscano D.O.P. is produced in the farming town of Mugello near Florence and Tuscany. Aged for 1 months, this Pecorino is crafted with Tuscan ewe’s milk collected from June through September. Its rind encases a crumbly straw-colored paste with a pronounced, buttery flavor, light sweetness, and a mild peppery finish. Pecorino Toscano serves admirably as a table cheese or as an addition to any recipe calling for a sharper cheese. Try alongside a bowl of toasted walnuts—the bitter, tannic nuts complement the oily richness of the cheese perfectly.
