In 1668, Nicola de Mariano de Carolo purchased the old stone oil mill next to his house in Bitritto, Puglia. Over three-and-a-half centuries, DeCarlo olive oil has remained a constant presence in Puglia, bringing families together over good food and conversation.Today DeCarlo oil is still made in its original location, according to the Nicola's original, time-tested method.
