Agostico Recca makes their Capers in Salt in Pantelleria, a windy island off the coast of Sicily. Pantelleria capers are picked before the flowers are formed, then cured in salt to preserve their intense, almost floral flavors. Capers are a staple for any Italian pantry. We recommend using these special capers in caponata, puttesca, lemon sauces, and with fish. Rinse before using to remove excess salt.
