Il Forteto Pecorino Toscano D.O.P. is produced in the farming town of Mugello near Florence and Tuscany. Aged for 1 months, this Pecorino is crafted with Tuscan ewe’s milk collected from June through September. Its rind encases a crumbly straw-colored paste with a pronounced, buttery flavor, light sweetness, and a mild peppery finish.  With a texture suitable for slicing, shaving and grating, Pecorino Toscano serves admirably as a table cheese or as an addition to any recipe calling for a sharper cheese. Try alongside a bowl of toasted walnuts—the bitter, tannic nuts complement the oily richness of the cheese perfectly.

The Tuscan reputation for fine cuisine is well deserved. In addition to stunning renaissance art and architecture, beautiful rolling landscapes and coastal retreats, this fertile region of central Italy is also home to some of the country's best wine, olives, fresh vegetables and savory meats.

First settled in the Florentine town of Bovecchio in 1977, the Forteto farmer's cooperative creates delicious Italian fare of a remarkable variety. From cheese and Chianina beef to apples and extra-virgin olive oil, Il Forteto is dedicated to the common cause of quality, sustainable agriculture.
