Perlage di Tartufo Truffle Caviar (perlage di tartufo) is made from the liquid essence of the black winter truffle, obtained directly from fresh truffles by  cooking. The tasty juice is then reduced in small pearls. Truffle Caviar has a concentrated taste of truffle with a soft texture. Try sprinkling atop a cacio e pepe pasta, roasted filet of fish, or enjoy a taste by the spoonful.
