This salami, with a classic taste of garlic, is stuffed in natural casings and slowly air-dried to perfection. A natural primo piatto (first dish), Volpi Genoa Salami adds flavor to salads, sandwiches and snacks. Slice and serve with mild cheese, flatbread, fruit and red wine. Genoa salami is commonly confused with 'genova salami', which both are regarded as a style or typical recipe of cured meats from the area of Genoa, Italy.

"Volpi has always been a great salami. I grew up with Oldani, and that will always be my favorite. , unfortunately they are no longer around. This is still a great salami with a better flavor than you can find in your deli. Slice super thin and watch it go quick."

"Volpi bought the recipe from an Italian import store in town. This store had an old Italian man who made it in a cedar salami room in North Adam's MA. Way back in the 90's the laws changed due to packaging laws which prohibited a "homemade" recipe which created a change of the manifold who produced the recipe as it is today. His name is Arnoldo Gavazzi. He had a little store where he made sausages ,salami, pastas ,meats of different varieties and the last time I went in for sausage and salami he told me he had to sell his recipe for the best financial reasons as he was planning for retirement and a lasting legacy for. hos children. That company is called Volpi which of course bummed all the Italians out because we were used to shopping in a big cedar salami room down to a private packaging company that paid for the recipe. In his seventies Arnoldo let this company take over the recipe for the salami and ive never had a salami that tastes so awesome! Sure it wasn't exactly like the cedar meat room ,picking out the salami u want to a company just producing a bought recipe from the original producer of the meat who had a hole in the wall place with customers out past the block next door but he had to follow the law but anyone who knew him knew he was done with all the new laws regarding packaging meats. His son continued making the best sausages known to man but we,customers knew we'd never get that chance to smell what Italians all know that had that affect of opening your wallet just for the smell from aan who's no more than 5'6" who had a handshake that would paralyze u if your not used to him. Lmao. I'll never forget this man ?but when I saw thos name Volpi , I hoped they'd do him right but as good as the salami is, its slowly decreasing in quality however its still better than anything to else ive tasted."
