Made using the most tender part of the famed Roman artichoke, this velvety artichoke spread is all natural and prepared using Agnoni extra virgin olive oil and a touch of vinegar to brighten it up. Spread on warm bruschetta and top with parmigiano Reggiano. Perfect used as a sauce in pasta. A must have for the pantry!

Newlyweds Neno and Nena Agnoni bought a farm in the hills outside Cori in Lazio, the central Italian region that is home to Rome, in the early 1960's.
