Volpi Bresaola is a salt-cured and air-dried beef, made according to a traditional recipe. Extremely lean, and sweet, with a deep ruby-red color, Bressola is commonly served in very thin slices. It can be enjoyed plain, paired with Parmigiano-Reggiano and arugula, or in a simple "carpaccio" with extra virgin olive oil, lemon, and black pepper.
