Taralli, a regional Puglia cracker, is a unsweetened cracker that is first boiled, then baked. Another longtime Puglia staple is "grano arso" which is burnt wheat. The ancient method of using burnt wheat in Italian cuisine has been making a strong comeback into home kitchens and specialty markets all over Italy and around the world in limited quantities. These crackers have a perfect subtle crunch and a smoky, nutty flavor.
