Pecorino Romano is produced in the Sardinia region of Italy. Due to its distinctive aroma, salty flavor, and pleasantly sharp taste, Pecorino Romano is most often used in pasta dishes -- grated to finish or integrated into sauces and pestos. It is also an excellent table cheese, delicious with fruit preserves and honey. Pecorino Romano is aged approximately 8 - 12 months for an ideal maturity and balanced sharpness.

    Situated in the Mediterranean sea, the picturesque island of Sardinia enjoys over 1200 miles of coastline and stunning mountain vistas. The island is also characterized by linguistic, cultural, and culinary traditions distinct from those of the mainland. The diet here is rich in beans of all sort -- including fava, lupine, and chickpeas -- and the wafer-thin traditional bread "carasu."
