Pecorino Romano is produced in the Sardinia region of Italy. Due to its distinctive aroma, salty flavor, and pleasantly sharp taste, Pecorino Romano is most often used in pasta dishes -- grated to finish or integrated into sauces and pestos. It is also an excellent table cheese, delicious with fruit preserves and honey. Pecorino Romano is aged approximately 8 - 12 months for an ideal maturity and balanced sharpness.
